POLYNESIAN
1 1/2 oz. Light Rum
1 oz. Passion Fruit Liqueur
1 tsp. Lemon Juice

This is a double drink served in a double Old Fashion glass with crushed ice.
SURF RIDER
1 oz. Light Puerto Rican Rum
1 oz. Dark Jamaican Rum
1/2 oz. Lemon Juice
1/2 tsp. Sugar
1/2 oz. Orange Juice
Dash of Orgeat Syrup

Blend with crushed ice and pour into a tall 14 oz. glass.
Don't wipe out Surf's up!
DIAMOND HEAD

1 1/2 oz. Gin
1/2 oz. Curacao
2 oz. Pineapple Juice
1 tsp. Sweet Vermouth

Shake ingredients with ice and strain into chilled cocktail glass.

TEQUILA SUNRISE
1 1/2 oz. Jose Cuervo Tequila
Juice of 1/2 Lime
1/2 oz. Lemon Juice
1/2 oz. Grenadine
1 oz. Grape Juice
1 oz. Orange Juice

Blend with 1 scoop ice. Serve in a tall chimney glass. Garnish with a sprig of cactus, then keep drinking till the sunrises or you fall over
HAWAIIAN SUNSET
1 1/2 oz. Light Rum
1/2 oz. Orange Curacao
1/2 oz. Orgeat Syrup
1 oz. Sweet Sour
Grenadine Syrup

Blend with crushed ice saving the grenadine to top. Serve in a tall chimney glass with a lime squeeze. Variation: Omit the glass.

SCORPION
1 1/2 oz. Light Rum
1 oz. Brandy
1/2 oz. Gin
2 oz. Orange Juice
Juice of 1/2 Lemon
Juice of 1/2 Lime
1/2 oz. Orgeat Syrup

Blend with 1 scoop crushed ice. Pour into a large snifter. Fill with ice cubes and garnish with fresh mint.
OCTOPUS
1 1/2 oz. Light Rum 151*
1 1/2 oz. Orange Juice
1 1/2 oz. Passion Fruit Nector
Dash of Angostura Bitters
Soda

Hold the soda, pour the rest into a large snifter. Fill with finely crushed ice. Top with soda and stir. Garnish with a whole papaya
BRASS MONKEY
3/4 oz. Vodka
3/4 oz. Light Rum
1/3 oz. Orange Juice

Pour vodka and rum over ice in a highball. Top off with orange juice and stir to combine.

"Brass Monkey that funky monkey"

BLUE WHALE
1 1/2 oz. Vodka
1 1/2 oz. Blue Curacao
1/2 oz. Lemon Juice
1 tsp. Sugar

Combine ingredients over ice and shake well to dissolve sugar. Strain into a frozen martini glass.
TANNED BEACH BUM

1 oz. Dark Rum
1 oz. Kahlua
Milk

Pour rum and kahlua over ice in a tumbler. Top off with milk and stir well to combine.

MARGARITA
1 1/2 oz. Jose Cuervo Tequila
1/2 oz. Triple Sec
1/2 Lime Juice
1/2 oz. Lemon Juice

Run a 1/4 lime around the rim of a stemmed 8 oz. Old Fashion glass. Coat the rim in Saucer of salt. Blend ingredients well with a scoop of crushed ice. Serve garnished with a lime wheel
BLUE HAWAII
1 oz. Light Rum
1/2 oz. Blue Curacao
1/2 oz. Lemon Juice
1 oz. Pineapple Juice

Most places blend this and use a little fresh pineapple. I love this drink the most, so I build it in a tall 14 oz. over crushed ice and look for fruit to top off, red is the best. More than five drinks teeth turn blue.
HURRICANE

1 oz. Light Rum
1 oz. Dark Rum
1 oz. Passion Fruit Nectar
2 tsp. Lime Juice

Combine ingredients in a shaker over ice and shake well. Strain into a chilled cocktail glass.

LAVA FLOW

1 oz. Vodka
2 oz. Kahlua
2 oz. Bailey's Irish Creame
2 oz. Creme de fraise or fresh/frozen strawberries

Put everything in a blender with crushed ice and blend until smooth.

NOTE: Basically this is a strawberry mudslide, but a Lava Flow sounds much better and makes it Hawaiian, Feeling Better? Go with the lava flow......
HAWAIIAN VOLCANO

1 oz. Amaretto
1 oz. Southern Comfort
1/2 oz. Vodka
2 oz. Orange Juice
1 oz. Pineapple Juice
Maraschino Cherry

Combine liquid ingredients over ice in a highball glass and stir well. Garnish wit a cherry.

TOM COLLINS

2 oz. Gin
Juice of 1/2 Lemon
1 tsp. Powdered Sugar
Chilled Club Soda
Maraschino Cherry

Shake first three ingredients with ice and strain into a highball glass filled with ice. Top off with soda and stir lightly to preserve sparkle. Garnish with cherry.
RECLINER

1 oz. Vodka
1 oz. Bourbon
1 oz. Cranberry Juice
1 oz. Pineapple Juice
1 oz. Orange Juice
Juice of 1/2 Lemon
1/2 tsp. Grenadine

Combine first six ingredients with ice and shake. Strain into a highball glass filled with ice. Pour grenadine on top and allow to settle through the drink. Then look for a Lazy-Boy
GIN & TONIC
1 1/2 oz. Gin
Chilled Tonic Water
Wedge of Lime

Pour gin into a highball glass filled with ice. Top off with tonic water and stir lightly to preserve sparkle. Garnish with lime wedge.

GIN ALOHA
1 1/2 oz. Gin
1 1/2 oz. Triple Sec
1/2 oz. Pineapple Juice
Dashes Orange Bitters

Combine ingredients over ice shake. Strain into a chilled cocktail glass.
DOUBLE DARE

1 oz. Gin
1 oz. Dry Vermouth
1/2 oz. Apricot Brandy
1 tsp. Lemon Juice

Combine ingredients over ice and stir well. Strain into a tumbler filled with ice.

RUM RUNNER

2 oz. Gin
1 oz. Pineapple Juice
Juice of 1/2 Lime
1 tsp. Sugar
Dash Orange Bitters
Wedge of Lime
Salt

Combine first five ingredients with ice and shake well. Rub lime wedge along the rim of a tumbler and dip rim in salt to coat it. Carefully pour ingredients along with ice into glass.
SEX ON THE BEACH
1 oz. Vodka
3/4 oz. Peach Schnapps
1 1/2 oz. Cranberry Juice
1 1/2 oz. Grapefruit Juice

Combine ingredients in a highball glass over ice. Stir well.

This drink is better if you don't drink alone, hint hint!
OYSTER SHOT
1 Freshly Shucked Raw Oyster
1 oz. Tequila
Dash of Pepper Sauce
Squeeze of Lemon Juice

Place oyster in bottom of chilled martini glass or shot glass. Pour in tequila, add pepper sauce and lemon juice. Drink as a shot allowing oyster to slide down your throat, try not to chew.

SEA BREEZE

2 oz. Vodka
Grapefruit Juice
Cranberry Juice

Pour vodka into a highball glass filled with ice. Top off with equal parts grapefruit and cranberry juice and stir.

Sit back and let the tide go out.
BAY BREEZE

2 oz. Vodka
4 oz. Cranberry Juice
4 oz. Pineapple Juice
Slice of Fresh Lime

Pour vodka over ice in a highball glass. Top off with juice and stir. Garnish with lime slice.

Sit back and let the tide come in.

KAMIKAZE
1 oz. Vodka
1 oz. Triple Sec
1 oz. Fresh Lime Juice

Shake ingredients with ice and strain into tumbler filled with ice cubes. For a slightly sweeter drink, substitute Rose's lime juice for fresh.

Look to the sky for attack planes.
PEARL HARBOR

1 oz. Vodka
1 oz. Melon Liqueur
1/2 oz. Orange Juice
1/2 oz. Pineapple Juice
Maraschino Cherry

Combine liquid ingredients over ice and shake. Strain into a chilled martini glass and garnish with a cherry.
BLOOD & SAND

3/4 oz. Scotch
3/4 oz. Cherry Brandy
3/4 oz. Sweet Vermouth
3/4 oz. Orange Juice

Combine ingredients with ice and shake. Strain into a chilled glass.

CHI-CHI
(Woman's Breast)

1 1/2 oz. Smirnoff Vodka
1/2 oz. Lemon Juice
2 oz. Pineapple Juice
1 oz. Orange Juice
1/2 oz. Milk
1 1/4 oz. Coconut Syrup

Blend all ingredients with 1 scoop crushed ice until smooth.
MORE CHI-CHI
(More of a Woman's Breast)

1 1/2 oz. Smirnoff Vodka
1/2 oz. Lemon Juice
1 1/2 oz. Pineapple Juice
1 Scoop Vanilla Ice Cream
1 oz. Coconut Syrup

Blend all ingredients with 1/2 scoop crushed ice until smooth.

GASOLINE

1 1/2 oz. Southern Comfort
1 1/2 oz. Tequila

Combine ingredients in a tumbler filled with ice and stir.

Warning: Don't drink and smoke with this little baby.
NUCLEAR WASTE

1 1/2 oz. Vodka
1 oz. Melon Liqueur
1 oz. Triple Sec
Dash Fresh Lime Juice

Combine first three ingredients over ice and stir. Strain into a shot glass or frozen cocktail glass. Add lime juice. The drink may be served on ice.
AFTER GLOW

1 1/2 oz. Blended Whiskey
3/4 oz. Southern Comfort
1 tsp. Banana Liqueur
1 tsp. Lemon Juice
Dash of Orange Bitters

Combine ingredients over ice. Shake well and pour over ice cubes in a rocks tumbler.

Warning: People standing near you may want to stand back.

BEACHCOMBER

2 oz. Light Rum
1/2 oz. Lime Juice
1/2 oz. Cherry Brandy
1 tsp. Maraschino Liqueur
Slice of Lime
Sugar

Combine first four ingredients over ice and shake. Rub lime slice along rim of chilled martini glass and dip rim in sugar to coat it. Strain drink into glass. Garnish with lime slice.
BETWEEN THE SHEETS

1 oz. Brandy
1 oz. Light Rum
1 oz. Triple Sec
1 oz. Lemon Juice
Twist of Lemon Peel

Pour liquid ingredients over ice and shake to combine. Twist lemon peel over a chilled martini glass to release oil. Strain drink into the glass.

BAMBOO

1 oz. Dry Sherry
1 oz. Dry Vermouth
Dash Angostura Bitters
Twist of Lemon Peel

Pour first three ingredients over ice and shake. Strain into a chilled cocktail glass. Garnish with a lemon twist.
MAI TAI
1 oz. Light Rum
1 oz. Dark Rum
1/3 oz. Orange Curacao
1/2 oz. Orgeat Syrup
1 oz. Sweet Sour
1 oz. Pineapple Juice
1 oz. Passion-Orange Juice
Squeeze 1/2 Lime

Pour everything into a Mai Tai glass and fill with crushed ice. Garnish with a pineapple cherry and a mint sprig.
BALI
1 oz. Light Rum
1 oz. Dark Rum
1 oz. Banana Liqueur
1/2 oz. Malibu
1/2 oz. Grenadine
Orange Juice

Shake first five ingredients with ice in a shaker and strain into a highball glass filled with ice. Top off with orange juice and stir to combine.

SKULL & BONES

3/4 oz. Dark Puerto Rican Rum
3/4 oz. Dark Jamaican Rum
1/2 oz. Cherry Brandy
1/2 oz. Honey
3/4 oz. Fresh Lime Juice

Blend with crushed ice
and serve in a parfait
glass or
an old skull.
KAUAI COFFEE

1 oz. Brandy
1 oz. Light Rum
1 Cup Hot Coffee
Whipped Cream
Ground Nutmeg

Pour brandy and rum into a mug and top off with coffee. Garnish with a dollop of whipped cream and a light sprinkle of nutmeg.

KAUAI FRUIT PUNCH

1 oz. Lemon Juice
Juice of 1/2 Lime
1 oz. Guava Nector
1 oz. Pineapple Juice
1/2 oz. Passion Fruit Juice
Soda

Blend with crushed ice,
Pour into a chimney glasses
fill glasses with soda.
Stir and add fruit you like

THE BLACK CAT
1 oz. Tequila
1 oz. Amaretto

Serve neat (without ice) in a tumbler or brandy snifter.
May be chilled by combining with ice, stirring, and straining into a glass.
